coconut candy production

Our last stop on the tour in the Mekong Delta was to see how coconut candy is produced. It was pretty cool. The meat of coconuts is mixed with sugar... melted... and once cooled, they are cut and packaged (...and delicious!).

Here, the melted goodness is poured into lines on a tray... cooled, then cut and packaged.

This is the one thing I bought during the day. They offer various kinds... plain coconut candy... or mixed with durian, peanuts, or cocoa. I got one of each (except the durian kind).   :P
